Kaladi Kulcha is one of Jammu's best-known street foods and has become a symbol of Dogra culinary identity. It is enjoyed by locals and visitors alike.
Method

Step 1
Slice the Kaladi into thick rounds about 1 cm thick. Avoid very thin slices as they may overcook quickly.

Heat a heavy cast-iron tawa over medium heat. Lightly grease it with butter or ghee.

Place the Kaladi slices on the hot tawa and cook slowly. Turn only when the underside becomes golden brown and crisp.

Continue roasting until the outside is crisp while the inside becomes soft, stretchy and creamy. Avoid high heat, which can toughen the cheese.

Lightly toast the kulcha with a little butter until warm and crisp.

Spread green chutney and anardana chutney inside the kulcha. Arrange roasted Kaladi on top, followed by sliced onions and a sprinkle of chaat masala and black pepper.

Serve immediately while the Kaladi is hot and stretchy.
Chef's Tips
- Cook Kaladi on medium heat only.
- Serve immediately after roasting.
- Authentic Kaladi from Jammu gives the best flavour.
