Khameera is a traditional fermented preparation from the Duggar region of Jammu.

Khameera showcases the traditional fermentation techniques once common in Dogra households.
Method

Step 1
Mix the flour, curd, salt and enough water to prepare a soft dough or thick batter depending on your family tradition.

Cover the mixture and allow it to ferment overnight in a warm place. Proper fermentation gives a mild sour aroma.

Knead lightly the next morning without overworking the dough.

Heat a griddle or tawa over medium heat and grease lightly.

Shape portions and cook evenly from both sides until golden brown.

Brush with ghee before serving and enjoy with curd, pickle or traditional Dogra accompaniments.
Chef's Tips
- Do not ferment in a cold place.
- Fresh curd produces better flavour.
- Do not overcook or the bread becomes dry.
